This is an easy and delicious salad to have for lunch or even dinner. For a lower carb version, wrap it up in a large romaine or iceberg lettuce leaf.
Real Quick & Easy
Use an organic rotisserie chicken. I added 1 tsp. of "Hot Sauce" and it added a great kick! Try it. You just may like it.
1 chicken breast
4 tbsp. fat free Greek yogurt
3 tbsp. Dijon mustard
Ezekiel bread, gluten free bread
Romaine or iceberg lettuce for wrap instead of bread
- Grill chicken breast
- Cool and chop into bite size pieces
- In a bowl, mix 4 tbsp. plain greek yogurt and 3 tbsp. Dijon mustard
- Add the chicken, celery, grapes and or dried cranberries and apple and mix well
- Serve on 2 slices 100% whole wheat bread or Ezekiel bread, add some lettuce for more veggies.
