Welcome back to my kitchen. Today we are making a family friendly recipe Pulled BBQ Chicken. This recipe is very low fat, delicious and great to keep in the fridge to "Grab and Go" during the week. Cutting Carbs, pair it with a salad. Serve it to the kids on a roll and watch them lick their lips.

Low Fat Crock Pot Pulled Chicken

Welcome back to my kitchen. Today we are making a family friendly recipe Pulled BBQ Chicken. This recipe is very low fat, delicious and great to keep in the fridge to "Grab and Go" during the week. Cutting Carbs, pair it with a salad. Serve it to the kids on a roll and watch them lick their lips.

Ingredients

1 lb chicken breast

1 can tomato sauce (look for low sodium)

1/2 c organic ketchup (has no high fructose corn syrup)

2 tbsp. brown sugar

1 tsp. Liquid Smoke optional

1 tsp. garlic powder

2 tbsp. apple cider vinegar

Crock pot

Rolls or lettuce wrap

Instructions

  1. In a bowl mix tomato sauce, ketchup, brown sugar, liquid smoke, garlic powder, and vinegar.  Pour into crock pot 
  2. Place chicken in crock pot and mix sauce to cover chicken
  3. Cook on high for 4-5 hours and then low until ready to eat
  4. Take two forks and pull the chicken apart to shred it OR cook on low 7-8 hours
