The Best Gluten Free Vegetable Lasagna

Gluten-Free Veggie Lasagna The Whole Family Will Love

The best gluten-free vegetable lasagna.  This Lasagna is going to become a staple in your household.  One of my best friends shared this recipe with me and I was in love with it.  It is “Hot and Healthy Body” approved.  It takes about 10 minutes to put together and tastes like you have been cooking all day long.

Lasagna is a feel-good comfort food and this is a great way to prepare it without all the extra calories and carbohydrates.  The zucchini substitutes for the noodles and that is what makes it gluten-free.  Adding a touch of fresh mozzarella cheese saves a lot of calories but still gives you an amazing flavor. You could even use squash or eggplant in place of the zucchini if you like. The leftovers are great the next day (if there are any).

Make It A Vegan Gluten-Free Vegetable Lasagna

Want to make it VEGAN? Then just use your favorite vegan veggie cheese. Enjoy this simple and easy gluten-free vegetable lasagna.

Why Gluten-Free?

Eating gluten, the naturally occurring proteins in wheat, barley, and rye can be life-threatening to people with celiac disease. A gluten-free diet is one that excludes most grains, and it is recommended for people who have celiac disease or gluten sensitivity.

Some people find when they take gluten out of their diet the feel better and may reduce inflammation in their bodies.  Removing gluten is fine, but be careful not to overindulge in gluten-free products thinking they are healthy.  They often time contain a lot of additives and fillers.  Use your judgment and read the ingredient labels.

The Best Gluten-Free Vegetable Lasagna

This gluten free vegetable lasagna is going to become a staple in your household.  One of my best friends shared this recipe with me and I was in love with it.  It is "Hot and Healthy Body" approved.  It takes about 10 minutes to put together and tastes like you have been cooking all day long.

Ingredients

1 jar tomato sauce or homemade sauce

1 large zucchini, cut thin and lengthwise

1 sweet potato, cut in thin circles

1 pkg of sliced mushrooms

1 red pepper sliced into strips

1 pkg of spinach

1 bunch fresh chopped basil

1 ball of fresh mozzarella cheese or shredded mozzarella or your favorite vegan cheese

Instructions

  1. Preheat oven to 350 degrees
  2. Lay thin sliced zucchini in baking dish
  3. Top with some tomato sauce
  4. Add thin sliced sweet potatoes, red pepper slices and mushrooms, spinach and fresh chopped basil
  5. Add more sauce and top with mozzarella cheese
  6. Bake covered for 25 minutes, then uncovered for another 20 to 30 minutes or until sweet potatoes are cooked through
  7. This vegetable lasagna is  great to eat the second day
  8. Add to a wrap or top on a salad and create more meals during the week

    I enjoyed your interview on She Thrives. Your website is a great resource. Thank you.
    This lasagna has caught my eye! I’ve been suffering from LPR for several years and am currently not including spicy foods, tomatoes, peppers, onion, garlic, or citrus in my meals. Miss them, but am okay without them, for the most part – except when dining out. Many, if not all, of these are included in most items on menus. I’m hoping more restaurants will wake up to creating 2 or 3 delicious dishes for folks who have difficulty with acidic foods.
    Anyway, I can easily eliminate red pepper from this recipe, but am having a hard time deciding on a substitute for tomato sauce. I have some ideas with nut cheeses, but not sure. Any ideas?

      Hi Patricia> I am so glad you saw the interview. This lasagna is delicious, I actually made it last night for a dinner party. Instead of the tomato sauce, you could use pumpkin pasta sauce or even butternut sauce. Look for them in the same isle as the tomato sauce, or I know that Target carries a Pumpkin Pasta sauce called, “Cucina Antica Tuscany Pumpkin Pasta Sauce” Trader Joes also carries this type of sauce. Let me know how you like it.

    Where is the eggplant in the recipe ?

      There is no eggplant in this recipe. But you could add it in for even more veggies.
