Easy Vegan Avocado & Tomato Stack

Easy Vegan Avocado & Tomato Stack. Make this a favorite healthy lunch time meal. I can make it in two minutes and because of the avocado and it’s beneficial fats it keeps me full.

Avocado And Tomato Salad

The combination of avocado and tomato makes a wonderful salad.  I make this often make this salad because it is so easy to put together in a snap.  This may just become your favorite healthy lunchtime meal. I like to use Roma tomatoes in this salad.  The avocado is a healthy fat and will help to keep you full throughout the day.

If you love avocado’s then you will love my super hydrating avocado facial mask.  The avocado is not just for eating.

Avocados

Avocados are easy to digest great for people with who may have digestive issues. They soothe the gut and are also anti-inflammatory. They are a healthy source of omega-6 fatty acids. These beauties will help keep you beautiful. They are anti-aging because they can help to reduce dryness in the skin and give you a healthy glow.

 

Tomatoes

Tomatoes are loaded with vitamin C, K< A and B-complex, as well as potassium, chromium, biotin, and beta-carotene. which is a great anti-inflammatory. They are also great for your skin and can help improve cardiovascular help.

Easy Vegan Avocado & Tomato Stack

Make this a favorite healthy lunchtime meal. You can make it in two minutes and because of the avocado and its beneficial fats, it keeps will keep you full. Add some protein if you like and you have a great lunch or dinner ready to go in less than 5 minutes.  Who said eating well was hard?

Ingredients

1 ripe avocado

1 large tomato

2 c baby field greens

1 tbsp. balsamic dressing

Instructions

  1. Cut tomato and avocado into slices
  2. Layer on top of baby field greens and drizzle on the balsamic dressing and top with chopped basil or make it into a salad
