Easy Vegan Avocado & Tomato Stack
Make this a favorite healthy lunch time meal. I can make it in two minutes and because of the avocado and it's beneficial fats it keeps me full. Add some protein if you like and you have a great lunch or dinner ready to go in less than 5 minutes. Who said eating well was hard?
1 ripe avocado
1 large tomato
2 c baby field greens
1 tbsp. balsamic dressing
- Cut tomato and avocado into slices
- Layer on top of baby field greens and drizzle on the balsamic dressing and top with chopped basil or make it into a salad

This may just become your favorite healthy lunch time meal. I like to use Roma tomatoes in this salad. The avocado is a healthy fat and will help to keep you full throughout the day.
