Cabbage can be green or red and is a leafy vegetable of the Brassica family.

Ingredients
2 c shredded carrots
2 c shredded purple/red cabbage
1 c jicama (cut into long strips)
Pumpkin seeds for garnish
Dressing
1/2 c orange juice, freshly squeezed
2 tbsp. extra virgin olive oil
1 lime, juiced
1 tbsp. ginger, grated
Instructions
- Combine vegetables in a large bowl
- Whisk dressing ingredients, and pour over vegetables
- Garnish with pumpkin seeds
- Let sit for 30 minutes to let dressing soak in
