Rainbow Slaw Salad – Did You Know That Cabbage Was a Superfood?

Rainbow Slaw Salad – The health benefits of cabbage are many. It helps to aid in constipation, stomach ulcers, and headaches. It helps to fight obesity, skin disorders, eczema, jaundice, scurvy, rheumatism, arthritis, gout, eye disorders, heart diseases, aging, and Alzheimer’s disease. Wow! That is amazing.

Cabbage can be green or red and is a leafy vegetable of the Brassica family.

An excellent source of vitamin C (green cabbage is a richer source of vitamin C than oranges) A good source of manganese (benefits of manganese including the formation of connective tissues, absorption of calcium, proper functioning of the thyroid gland and sex hormones, regulation of blood sugar level, and
metabolism of fats and carbohydrates)

  • Can reduce free radicals in the body
  • Rich in fiber
  • Rich in natural sulfur which is known to help fight infections

Red cabbage is one of the most healthful and least expensive vegetables available today. It is rich in vitamins C, K, & B-complex and minerals such as iodine, calcium, magnesium, potassium, and iron. It is also high in anthocyanin polyphenols which are powerful antioxidants that contain potent anti-inflammatory, anti-viral, and anti-cancer properties.

The health benefits of cabbage include frequent use as a treatment to aid in constipation, stomach ulcers, headaches, obesity, skin disorders, eczema, jaundice, scurvy, rheumatism, arthritis, gout, eye disorders, heart diseases, aging, and Alzheimer’s disease.

Ingredients

2 c shredded carrots

2 c shredded purple/red cabbage

1 c jicama (cut into long strips)

Pumpkin seeds for garnish

Dressing

1/2 c orange juice, freshly squeezed

2 tbsp. extra virgin olive oil

1 lime, juiced

1 tbsp. ginger, grated

Instructions

  1. Combine vegetables in a large bowl
  2. Whisk dressing ingredients, and pour over vegetables
  3. Garnish with pumpkin seeds
  4. Let sit for 30 minutes to let dressing soak in
