Wheat Berry Apple Salad with Cranberries
This is one of my favorite side dishes. I love the burst of the wheat berries and the sweetness of the cranberries.
Easy to make and great to serve to company. Be prepared to share the recipe with them!
Ingredients
1 1/2 c hard red winter-wheat berries (cooked & drained)
7 c cold water
1/3 c freshly squeezed orange juice
1/3 c dried cranberries
1 large apple - Fuji, Gala, Pink Lady are my favorites, unpeeled, diced
1/2 c pecan halves, or walnut halves toasted and coarsely chopped
3 tbsp. raspberry vinegar
3 tbsp. extra-virgin olive oil
Salt & pepper to taste
Instructions
- Rinse wheat berries well under cool running water
- Bring to a boil over high heat, then reduce heat, cover, and simmer gently, stirring occasionally, for 1 hour. Drain and rinse. Let cool to room temperature
- Combine orange juice and cranberries in a small bowl. Let stand for 15 minutes
- Combine wheat berries, apple and nuts in a large bowl; stir gently
- Add the OJ & Cranberries to the wheat berries, mix well
- Refrigerate for at least 30 minutes to allow the flavors to combine. Serve cold or at room temperature

Lemon Juice
