The Best Mashed Cauliflower Recipe

Healthy Alternative to Mashed Potatoes

Mashed Cauliflower – Who knew that this cauliflower recipe would be such a great healthy alternative to mashed potatoes. It’s low in calories and low in carbohydrates. Plus it’s delicious.

I was a little skeptical at first but after I made them I was pleasantly surprised. One, how easy they are to make and two, how delicious they taste.  If you love this recipe then you will love my Garlic Shrimp with Zucchini noodles.

Benefits of Cauliflower

  2. Good for digestion
  3. Low in calories and good for weight loss
  4. Can help to reduce the risk of cancer
  5. High in vitamins and minerals

A one-cup serving of cauliflower contains:

  • 29 calories
  • Close to zero grams of fat, sodium, or sugar
  • 73% daily value (DV) of Vitamin C
  •  19% DV of Vitamin K
  •  15% DV of folate14%
  •  13% DV of pantothenic acid
  •  12% DV of Vitamin B6
  •  11% DV of choline
  •  11% DV of fiber
  •   9% DV of Omega-3 fatty acids

The Best Mashed Cauliflower Recipe

Who knew that cauliflower could be such a great healthy alternative to mashed potatoes. I was a little skeptical at first but after I made them I was pleasantly surprised. One, how easy they are to make and two, how delicious they taste.

Ingredients

1 head of cauliflower, chopped into small pieces

1/2 c almond milk or milk of choice

Garlic powder

Salt & pepper to taste

Instructions

  1. Take cauliflower and cut off the stem
  2. Chop to a fine texture
  3. Prepare a double boiler and steam cauliflower for about 10 minutes
  4. Place cauliflower in a cuisinart food processor and add 1/2 cup milk of choice and blend until smooth
  5. Add more almond milk if needed
  6. Add garlic powder and salt and pepper to taste
  7. Blend well and serve warm
