Chickpea And Tomato Salad

Are you getting bored eating brown rice and quinoa? Need a little something different? This is going to be perfect for you! It is quick, easy and low fat, full of vitamins and minerals and a great way to get your veggies in at the same time.

I made this and put it on top of lettuce and added some organic grilled chicken for a full meal. But it works great as a side dish too. Make a large bowl for your next BBQ or family dinner.

Chickpea and Tomato Salad

Are you getting bored eating brown rice and quinoa?  Need a little something different?  This is going to be perfect for you! It is quick, easy and low fat, full of vitamins and minerals and a great way to get your veggies in at the same time. I made this and put it on top of lettuce and added some organic grilled chicken for a full meal.  But it works great as a side dish too. Make a large bowl for your next BBQ or family dinner.

Ingredients

1 can chickpeas, drained

1 large tomato, chopped

1 handful spinach

1 cucumber, cut up

1 c broccoli or any veggie you have on hand

1 tbsp. flavored vinegar

1/2 lemon, juiced

1 pinch celtic sea salt

Seasoning to taste

Instructions

  1. Combine all the ingredients in a large bowl, mix, let it sit and rest about 5 minutes and serve or chill for later in fridge
  2. I have also added sliced grilled chicken that I made on the George Foreman Grill and made it a meal
  3. Enjoy

Notes
